Jamaican Cornmeal Pudding Recipe

Cornmeal Pudding Recipe

2 cans coconut milk

..one light & one classic or regular

5 cups box coconut milk

2 cups cornmeal

1 cup flour

1 cup of granulated sugar

1 cup raisin

A dash of cinnamon

A dash of nutmeg

A dash of all spice

1/2 teaspoon of almond extract

A tablespoon of vanilla

A pinch of salt

 

Method:

Bring two cans for coconut milk & two cups of box coconut milk to a boil add 1 cup raisin.

Mix one cup of flour & one cup of box coconut milk thoroughly making sure it’s free of lumps. Add two cups of cornmeal & two cups of box coconut milk. Mix until smooth.

Pour mixture into boiling milk continue stirring to ensure no lumps are formed.

Add one cup of sugar

A dash of:

- cinnamon

- nutmeg

- allspice

- 1/2 teaspoon almond extract

- 1 tablespoon vanilla

- a pinch of salt

After mixture thickens pour into a greased baking pan n bake for 45 minutes to one hour depending of your oven.

 

For soft top:

On the stove top. Use a frying pan or pot to simmer, a small portion of can coconut milk two tablespoons of sugar, a dash of, nutmeg, cinnamon, allspice, 1/4 or half teaspoon butter & vanilla. Pour on top of freshly baked pudding.

 

Pls note: pudding will be soft after finish baking. Allow to cool n set.
