Fried Green Plantains with Grilled Shrimp & Pineapple Salsa

Ingredients:

2 green plantains

2 avocados pitted

1 stalk scallion find the chopped

1 small red onion finely chopped

The juice from one lemon

1 Pack of corn kernels

6 slices of sweet pineapples

1/4 to 1/2 pound of shrimp

Salt

Black pepper

Half bunch of cilantro

 

Method:

Peel plantains & slice. Fry until they are half way cooked. Then take out plantains press n finish frying until they are crispy. Sprinkle with salt to taste.

 

Roast corn kernels for about 5 minutes.

 

Season shrimp with salt and pepper. Heat the grill to 350 degrees n grill shrimp and pineapple.

 

Dice avocado in small pieces. Chopped cilantro in small pieces.

Combine avocado, scallion, red onion, grill shrimp and pineapple, lemon juice and salt & pepper to taste. Mix all ingredients together well.
